Bun's Lab
We have so many NOS parts that it makes sense to put them into an inventory management system. This also enables us to share our stock with friends, let them rummage through it virtually, so we can mail them what they need.
Well worth it even for parts I only got a few of. Bye bye spreadsheets.

That inventory management system is PartDB https://github.com/Part-DB/Part-DB-server
Available as a docker image. Setup takes about 15mins.

We also looked at inventree and had an instance running for evaluation.
The reason why we picked PartDB was the working import functions for the part suppliers we use (mouser, reichelt, etc)

Inventree is written in python and I would've preferred that. But I need easy import functions. Inventree does do the big names, but not reichelt.
