The short answer to this question is: because Christians are peaceful & non-violent, & because targeting muslims will result in the provocation being met with violent pushback. Its that simple. The peaceful nature of Christians makes them a target for the violent Left— its classic bullying, but on a much bigger uglier scope. Same thing.
