How do I simmer the HCQ recipe?
Simmering means to cook a liquid at a temperature that is slightly under the boiling point. It’s a gentle way to gradually cook ingredients so they are preserved and it intensifies flavors by concentrating them.

To simmer means to bring a liquid to a temperature that is just below the boiling point – somewhere between 185°F (85°C) and 205°F (96°C).

Set the heat to medium-low for a gradual simmer. Stay near the stovetop, since you will probably need to adjust the heat up or down as the liquid is brought up to a slow simmer. A 'slow simmer' is when a couple of tiny bubbles erupt every 1 or 2 seconds.

It’s a good idea to stay near the stove as the simmer is in progress until you’re sure you’ve reached a point of constant simmering. Then set the timer for 2 hours.

Some people believe with the HCQ recipe that it's important to put the lid on in the beginning and never remove the lid for the entire 2 hours as well as during the cooling down time. (Using a pot with a clear glass lid is very helpful for this process.) This will help not only to preserve the flavors but also helps contain the natural quinine from the fruit peels within the pot so it doesn't escape in the steam, but goes back into the recipe as it cools.

It takes a long time to cool down, so if you make it in the evening, you can let it set on the stove or a cooling rack all night to cool down before transferring to jars to to store in the refrigerator.

The recipe usually yields about a gallon or more. This will usually last about a week for one person drinking two cups a day. You can store it in a self dispensing glass sun-tea jar, 2 half gallon jars or quart jars or whatever you like to store as you use it.

People have used other methods, but overall, stovetop cooking is the best way to make HCQ to help preserve the healing properties for it to be most effective to help fortify your immune system.
