Non-minecraft gamer looking for modpack to play with minecraft-loving husband

My husband loves Minecraft(specifically modded, not vanilla) and he wants us to play together but it’s not really my type of game and I didn’t grow up with it so there is no nostalgia there. I have tried both vanilla Minecraft and All The Mods 10 but none of them have made me excited to play. I prefer RPGs such as Baldurs Gate 3, Zelda BOTW, etc. but I still want to give Minecraft another shot. He likes kitchensink modpacks with a bunch of tech and magic and which have quests, otherwise he likes simulation and grand strategy games. Is there any modpack you would recommend?

Is Refined Storage worse than AE2 in terms of performance and stability?

I heard that Refined Storage can get quite laggy and has a chance to corrupt your world

Is that all true?

And if it is, then for what version? (of Minecraft)
