How to preserve fresh eggs for up to 2 years at room temperature

A technique of egg preservation from the early 1800s.

You will need:
-3.5 gallon food grade buckets (5 gallon gets too heavy)
-Gamma lids for convenience
-Distilled water, NOT tap
-Pickling Lime/Calcium Hydroxide (food grade)
-Freshly laid, clean, unwashed eggs with the bloom intact

In a 3.5 gallon bucket, you will use 5 quarts of water. The volume of the eggs displaces the water all the way to the top.

The ratio of lime to water is 1 ounce to 1 quart.

So, for 5 quarts, you will measure and mix in 5 ounces of lime.

Gently add fresh eggs into the bucket the day they are laid. Ensure there is no poop, dirt or debris on the eggs. Do not wash them. Store at room temperature, or ideally, a cellar/basement to lengthen the time they can be preserved.

When removing eggs from the bucket, try to reach to the bottom eggs first, since they are the oldest and should be eaten before the others.

*You can't use storebought eggs for this.

Just read your post on water glassing eggs. I do this myself. Many people have no idea, good Info. Another good one to add to that might be how to test an egg for freshness. After being in the pail for that long, I always test before I eat.

As you may know, as they go bad, bacteria forms gasses in the egg. The gas pocket causes em to float. Toss em in some water.. A good egg sinks.. A bad egg will float. One that's about to go bad, say 1-2 weeks, will stay at the bottom, but stand on end.

Good info for people that will try preserving 😁

I celebrate many a “New Year” ~ just ride the current of change and growth whenever I get the chance: birthdays, anniversaries, solstices and equinoxes, Gregorian new year, Easter, a haircut.
