I think the answer to why flights are being cancelled is answered in the first paragraph. Pilots who are fully vaccinated are testing positive for COVID therefore based on CDC guidelines they must go into quarantine leaving airlines constantly short of pilots.

People in China use QR code passports to check in everywhere. If a city in China decides to lockdown, people are forced to take daily covid tests otherwise they get sent off to the COVID camps.
