What IF …
✨ What if not having a v passport meant that you could no longer go to a restaurant and instead were forced to have picnics and dinner parties?
✨ What if not having a v passport meant that instead of supporting huge supermarket chains where 80% of the food is rubbish, you instead had to turn to your local farmers and green grocers?
✨ What if not being allowed to fly meant that instead you had to explore your own beautiful state or roadtrip through the countryside? Bringing business back to small towns along the way.
✨ What if losing your job working for a company meant that instead you got to start building your passion and vision and start your own business and got to keep the income generated for yourself?
✨ What if instead of running straight to the doctor you started looking into other healing modalities that focused on the cause instead of the symptoms?
✨ What if instead of being stuck indoors training in a gym you trained amongst nature and in the fresh air and sunshine?
✨What if... instead of living in fear you lived in faith and you started realizing that these could be silver linings and blessings in disguise. 🧡

Some friends turned me onto the bulletproof coffee recipe. I decided to make my own pumpkin spice version this morning loaded with tons of healthy fats. Here is my recipe:
-Raw heavy cream
-1 Raw egg
- splash of homemade vanilla
- A hearty tablespoon of grass-fed butter (can also use coconut oil)
-A hearty scoop of pumpkin purée
-Whatever pumpkin spice blend you’d like to do (cinnamon, nutmeg, ginger, clove, etc.)
-Sweetener of your choice. I only had date syrup on hand, but maple syrup or raw honey would be fabulous.
*can also add in collagen
Pulse a few times in a blender until frothy and poor over coffee. 🤤

JUST IN - Biden's COVID-19 vaccine mandate begins January 4, with hefty fines for noncompliance.
Large employers with 100+ workers must mandate vaccinations and/or weekly testing and masks for those who refuse the vaccine.
OSHA plans to send out agents to check that workplaces are in compliance with the rule. For willful violations, a company can be fined up to $136,532. The standard penalty is $13,653 for a single violation.

Freezing common vegetables is really easy!
Onions — easiest because it's just peel, chop, freeze. They will freeze into a big mass. I just hack off what I need for a soup or a skillet and throw them in. You can freeze them in small bags by serving size, if you like. 1 cup at a time.
Carrots, Broccoli, Cauliflower, Potatoes, Sweet Potatoes are about the same process.
1) peel and chop
2) blanche
3) ice bath
4) freeze
Blanche simply means to boil briefly. The times for each vegetable are below.
Ice Bath:
cold water with floating ice cubes.
Ice bath your blanched veg for an equal amount of time as you blanched.
Freeze:
to avoid having a giant mass of vegetables frozen together and, instead, have individual vegetable pieces, you can pre-freeze right after your ice bath. Just lay out single layers of your blanched/ice bathed veg and freeze them until hard, then put them in the bag.
Use high quality/thick zipper bags or vacuum sealer.
Any kind of potatoes:
—blanche 3-5 minutes for small (1.5" or smaller) or 8-10 for large
—they will last longest if you boil them until tender and then proceed to ice bath

—"baby carrots" are a variety of carrot which doesn't freeze as well as full size carrots
— cut your carrots into 1/4" coins and blanch for 2 minutes
Broccoli and Cauliflower:
—chop florets apart
—stems: peel off the tough outer skin and chop into 1/2" thick pieces
—3 minutes boil/blanche or 5 minutes steamer
