The unbridled joy of having something baked come out perfect.
Lemon Cream Cheese Cookies
1 cup (2 sticks) unsalted butter, softened
8 oz cream cheese, softened
3 cups powdered sugar, plus 1/2 cup or so extra set aside
2 eggs
1 tsp baking powder
2 tsp vanilla extract
3 tsp lemon extract
Juice of 1 lemon
1/2 tsp salt
2 tbsp lemon zest (1 large lemon should cover it)
3 1/2 cups flour
In a large bowl with a hand or stand mixer (I do NOT recommend trying to do this one by hand), mix together the butter and cream cheese until smooth, should take about a minute. Gradually add the powdered sugar until fully mixed, scraping down the sides as needed.
Add the egg, baking powder, vanilla, lemon extract/zest/juice, and salt. Mix to combine. Add in the flour roughly 1/2 cup at a time until fully incorporated, scraping down the sides as needed. Place in fridge for about an hour to firm up.
Preheat oven to 350 degrees. Place extra powdered sugar in a small bowl. Roll cookie dough into roughly 1 tablespoon sized balls and roll in the sugar, then place on a parchment paper-lined baking sheet at least an inch apart.
Bake for 10-14 minutes or until the cookies are just set (start watching them closely around minute 8.) When done, cookies will hold their shape but be slightly soft, and the bottoms will be very lightly golden brown, browning slightly more as they rest. Let cool on the sheet tray for 3-5 minutes, then transfer cookies to sit on a wire rack to finish cooling.
Makes roughly 48 cookies.
