Lemon jelly recipe
250g of water
160 g of sugar
50 g of potato starch
peel of 1 lemon
lemon juice to taste (at least 1 lemon)
optional: a bit of something buttery like margarine or coconut butter (I added just a pinch for texture and smoothness)
Mix grated lemon peel, sugar and starch, then slowly add water
Put on a low fire and keep stirring for like 5 minutes until it becomes a bit of a creamy jelly, then turn off the fire and add the lemon juice (and the coconut butter if it's too liquid)
Let cool
Eat :3
