Why does my Alu production keep stopping even though it shouldn't be getting too much water?

So, I recently built an Alu scrap production. I did the math the way I thought I was supposed to. Yet, I keep overflowing with water even though I shouldn't be. Why is this?

I use the sloppy alumina alt recipe (Don't know if it's better, I just like not having byproducts) and a mk3 miner overclocked to produce 1200 bauxite/min, this means that I need 1200 water/min, which I supply. Then once the production starts, I remove about 720 water to make room for the water byproduct. Yet, despite doing this, I keep running full, like the water is magically coming back.

I have 720 water/min as a by product, so I still supply 480 from pump since I should have to in order to reach the 1200 water a min, but for some reason it doesn't work. My alu stops due to excessive water.

But HOW is this game optimized?

Obviously not everything is rendered and simulated at all times but how does this game work behind the scenes to keep all these (tens) of thousands of items and connections I have placed running and consistent? Asking this as a software developer but in a boring domain
