Custom ROM That Gets Updated Regularly vs Unlocked Bootloader Security Risk

I've been flashing ROMs on Android devices since the G1. At this point I barely mess around with that stuff anymore as I've had Samsung flagships for the last few years and don't see any need to anymore. However, when I look at my now aging OnePlus 7 Pro, I was wondering to myself: what is the current risk/benefit analysis on flashing a custom ROM on an Android phone so you can continue to get security updates vs the inherent risk associated with carrying around a phone with your crucial info on...
