What if you can't even trust the legitimate apps on your phone?
How important are OS updates when considering longevity?
This is more a long-term value question, I'm aware the hardware isn't hugely different apart from the processor. So my two questions relate to longevity in terms of the OS updates/security and the processor. The 400 euro difference between the S9 plus and S10 plus is significant for me., but if I spend this much I plan to use it for quite a while...

On Android, if you have the stock OS, paranoid about being spied on, or would like to save some battery life, you can use a packet analyzer such as PCAPdroid (one that I use), Packet Capture or PCAP Dumper to see what apps are connecting where, timestamps, packet size and more. PCAPdroid also gives you a settings button to redirect to any app's settings to disable settings.
My personal favorites to change for apps are:
Permissions > x (Settings the app doesn't require)
