This PhD project aims to uncover the secondary and tertiary molecular structures of proteins derived from processed plant-based foods using advanced spectroscopic methods (FTIR, NMR, LC-MS). You’ll explore protein functionality, develop predictive models, and assess protein content in food products through non-destructive techniques.

Scholarship: NZ$ 35,000 (tax-free) per year for 3 years
Full tuition fee coverage
Opportunities for travel to other research institutes as needed
Eligibility
A New Zealand 1st Class Honours degree or MSc (with significant research) in food chemistry, analytical chemistry, organic chemistry (particularly protein chemistry), biochemistry, chemical engineering, or physics.
Strong interpersonal, communication, and self-directed research skills.
Experience in mass spectroscopy, NMR, or fermentation is a plus.
Proficiency in English is required (details: University of Otago English Requirements).
