In a world where most “health experts” recommend “fiber-rich” brown rice (check it out, the fiber content isn’t even that high anyway), it might surprise you that I’ll always choose white rice over brown rice. This is because the lectins and phytates (types of anti-nutrients) found in the hull, which are removed when processing white rice.
Brown rice also contains about 80% more arsenic than white rice. This is because when rice takes up arsenic from the soil, it concentrates it in the outer layer, which is removed in white rice.
