Good morning ladies and gents, don't forget to eat your kraut. Recipe for raw lacto-fermented sauerkraut incoming. You should absolutely include fermented foods (kraut, raw pickled veggies, sprouted/soaked grains, cultured dairy, etc) as an integral part of you and your family's daily diet. Gut health is vital. You don't need a crock as the recipe states though they are helpful. Sterilized Mason jars work great. You can use clean sterile stones or glass weights to keep tricky things like cucumbers down. Provided the food is FULLY SUBMERGED and not exposed to oxygen it will remain safe to eat.
