You don't need a crock as the recipe states though they are helpful. Sterilized Mason jars work great. You can use clean sterile stones or glass weights to keep tricky things like cucumbers down. Provided the food is FULLY SUBMERGED and not exposed to oxygen it will remain safe to eat.
